Thanksgiving food - what's on your menu?

Turkey Hindquarters
Stuffing
Fresh Cranberries (first time i'm making them from fresh fruit)
*Mashed Potatoes
*Shrimp Cocktail
*Clam Chowder
Korean Style Ribs
Brownies
*Pumpkin Pie

*from costco!

and I plan to do some yoga tonight to relax me for tomorrow.

Every year I swear to downsize. I thought this menu was manageable but it's still been a lot of work and there's more to go:

Organic chicken roasted with carrots, parsnips, turnips, onion, shallot and herbs from my garden

Roasted Brussels sprouts

Mashed sweet potatoes

Homemade whole berry cranberry sauce

Partially homemade pumpkin pie (frozen gluten free crust)

Vanilla ice cream to hide the crappy pie crust

We’re actually having our official Thanksgiving meal tomorrow since we’re going to a college football game tonight, but here’s what will be on the menu -

My youngest daughter's in-laws wanted to host the dinner this year and wanted to supply the meal. So, not sure what the menu is, but it will be delicious. I am bringing the wine.

Locally raised, pastured whole chicken, roasted, loosely following Ina Garten's Roasted Chicken recipe. The cavity was stuffed with a head of garlic cut in half, a lemon (halved) and herbs. I used a big handful of fresh rosemary, thyme and sage (grown by a friend) and it smelled amazing and was very moist.

Veggies roasted with the chicken: carrots, onions, sweet potatoes

Cauliflower casserole

Quinoa medley (quinoa, brown rice, wild rice, red rice, lentils), cooked in homemade chicken bone broth

A mug of hot golden milk for dessert.

DH and I are on our own, as DS and DIL are visiting friends in another state, so I kept it simple.

I now have the carcass and some aromatic veggies simmering on the stove - whipping up a new batch of chicken bone broth. And most important - tons of leftovers in the refrigerator.

Hope everyone had a lovely Thanksgiving.

I went to my sister's for the traditional feast. For us, it's about creating the opportunity to eat leftovers all weekend, but I did have two pieces of pecan pie yesterday.

  • Roasted chicken
  • Roasted Carrots
  • Collard Greens
  • Dressing
  • Sweet Potato Souffle
  • Green Beans
  • Murder Mac and Cheese (the murder is from the five cheeses, haha!)
  • Sweet Peas with Pearled Onions
  • Rolls

All from scratch, except the rolls.

Cyana, I too have a chicken carcass that I will be using to make soup tomorrow . Perfect weather in NJ for it too.

I make the pie and my husband makes the rest of the meal. He has perfected Thanksgiving for two.

Dijon Herb Turkey Breast with Mushroom Gravy
Garlic Mashed Potatoes
Crispy Brussels Sprouts with Pancetta and Lemon
Fresh Cranberry Sauce
Pumpkin Pie (made with maple syrup and dark molasses instead of sugar and sour cream and heavy cream instead of evaporated milk and a dash of cayenne pepper)
